Founded in 2003 by LSU basketball walk-ons Jack Warner and Brandon Landry, Last In Concepts has grown from its original location across from the LSU campus to 10 restaurants in Baton Rouge, Lafayette and New Orleans. The chain includes Happy's Irish Pub – "where Happy's girls make happy boys;" The Roux House, an energetic live music venue; and Walk-On’s Catering, a fifth concept driven by the popularity of its namesake’s unique Louisiana menu.
